Everybody experiences a bad day and what most of us foodies tend to turn to is comfort food! I believe in giving into your bodies cravings as long as I can find a healthy way of doing it! I love this almond flour pizza crust with all your favourite toppings piled on top. Why almond flour? It is low carb, gluten free, packed with vitamin E and it is a great alternative for flour. It is a little tricky to get recipes to the right ratios and you do have to be a little more tender with the dough!
1 & 3/4 cups almond flour (or almond meal)
1/2 tsp sea salt
1 Tbsp dried oregano
1 Tbsp olive oil
1 can tomatoes
3 cloves garlic
1 cup cheddar cheese
A sprinkling of chilli (if you like it hot)
For the crust mix together the almond flour, salt and oregano and then mix in the egg and olive oil to form a dough. Roll out the dough between two pieces of parchment paper as thinly as possible. The dough should roll out into a pan of about 45 x 25cm. Once roll out trasport the dough to a lined baking tray lined with another piece of parchment paper which has been lightly greased. Bake at 180 degrees for about 12-15 minutes until slightly brown.
Transport the tin of tomatoes into a saucepan with a bit of oil and some fresh basil leaves (if you have). Boil until the tomatoes reduce into a thick sauce. This should be done slowly over a low heat but due to my impatient ways I tend to turn the heat up full blast!
Once the pizza crust is slightly brown turn it over onto the baking tray and remove the parchment paper (carefully as the almond base is very fragile!). Add the thick tomato sauce as liberally as preferred and add the cheddar cheese. Into the oven for about 5 minutes or until the cheese has melted.
Remove from the oven and top with any toppings that you desire. You will want to share this between two because almond flour is extremely filling!
