I love sweet things and because I don’t react well to sugar I came across this really easy sugar free recipe! Chocolate cheese – sounds strange I know! But give it a try, I promise you will love them – it’s hard not to!
1/2 cup unsweetened cocoa powder
120g cream cheese
1/2 tsp vanilla extract
3 Tbsp Truvia (or sugar equivalent)
In a food processor combine the cocoa powder, cream cheese, vanilla extract and Truvia until combined well. Using a spoon roll scoop a small amount of the mixture and roll into a ball (this is a bit of messy job!). Then roll the ball in the chopped almonds and place in a cupcake case . Makes about 12 truffles, keep refrigerated.
You can roll the truffles in cocoa powder, any nuts or coconut. You can also experiment with different flavourings or extracts.
