I pretty much go all day without sugar (except for my addiction to chewing gum!) so after dinner when I have a cup of tea I am dying for a little treat to satisfy my sweet tooth. This peanut butter cookie recipe is sugar free and definitely calms the cravings!
1 cup Truvia (or sugar equivalent)
1 cup smooth peanut butter (natural and low in sugar I use Whole Earth)
1 large egg
1 tsp baking powder
1/2 tsp vanilla extract
1 tsp water
1/3 cup chopped peanuts (optional)
Preheat your oven to 180 degrees
Throw all the ingredients into a mixing bowl and use a beater to mix well. Then line a baking tray with grease proof paper. The mixture is quite dry and should be broken apart. Take about 1 tablespoon of the mixture and roll into a ball then press down with a fork on the baking tray. The mixture rises quite a bit so be sure to leave some space in between the biscuits. This mixture will make 12 large biscuits or about 16 smaller ones depending on what you like.
Bake in the oven for 15 minutes or slightly longer until the cookies are slightly brown. The cookies won’t be hard but once you leave then outside the oven for about 10 minutes they will miraculously go hard and are super crunchy! Then transfer to an airing rack to cool completely and store in an airtight container.
