There is nothing quite like coming home to the smells of roast chicken and spices wafting through the house and on top of that having dinner cooked for you! This recipe is so simple but looks and tastes completely gourmet! My boyfriend always gets great credit for having this one sizzling away in the oven when I come home!
2 x quarter chicken pieces
2 small clementines/oranges
2 tablespoons dried herbs – basil, oregano, parsley (oh course fresh is even better, you can also try some rosemary and thyme)
Salt and pepper to taste
1 small butternut
2 tablespoons olive oil
3 cloves of garlic
Place the chicken pieces onto a roasting tray. Cut up the butternut into small chucks and place onto the baking tray. Squeeze out the juice from the clementines over the chicken and the butternut and place into the baking tray. Place the whole garlic cloves (peeled or unpeeled) into the tray. Rub the olive oil, herbs, salt and pepper into the chicken.
Cover with foil, bun in the oven (as my mother would say) on 200 degrees for 40 minutes, remove foil and cook for a further 20 minutes or until skin is nice and crispy.
Voila – gourmet roast chicken.
