I love pizza but I really hate the way it makes you feel afterwards – sluggish and bloated! When I came across this recipe to make pizza crust out of cauliflower I was seriously intrigued. Please know that I barely eat cauliflower even when it’s smothered in cheese sauce so believe me when I tell you that this pizza crust really tastes great and not only is it gluten free it is truly healthy!
makes 1 large crust

4 cups raw cauliflower rice
1 egg, beaten
1/3 cup soft goat/feta cheese
1 teaspoon dried oregano
pinch of salt
Preheat your oven to 200 degrees before you get started.
Step 1: Make the ‘dough’
Place the cauliflower heads in a steamer for about 4-5 minutes until cooked. Pat dry and then blend the cauliflower in a food processor.
In a large bowl, mix up your cauliflower, beaten egg, goat cheese, and spices. It won’t be like any pizza dough you’ve ever worked with, but don’t worry– it’ll hold together!
Form a crust shape with the dough on a baking sheet lined with grease proof paper. Keep the dough about 1/3″ thick, and make the edges a little higher for a “crust” effect.
Step 2: Bake your crust
Bake for 35-40 minutes at 200 degrees.
The crust should be firm, and golden brown when finished.
Step 3: Load on your Toppings
Add all you favourites, I have used napolitana tomato sauce, cheddar cheese and salami with a handful of rocket and Parmesan cheese added on at the end.
Return the pizza to the over at 200 degrees and bake for another 5-10 minutes, just until the cheese is hot and bubbly.
Then slice and serve immediately!
(This recipe is a bit time consuming so you can also freeze another pizza crust once you have baked and loaded on the toppings, just wrap it up in foil and freeze for next time. Just thaw and bake at 200 degrees.)
