I’m currently on the anti candida diet and it’s not easy when you can’t eat sugar let me tell you!
I did come across these zucchini muffins that came out pretty well especially considering they are dairy free, gluten free, sugar free and a relatively low carb vegetable muffin!
6 TBS coconut flour
3 TBS coconut oil
1 cup grated zuchini (finely grated is best)
15-20 drops liquid stevia (I use NuNaturals)
1/2 tsp Nutmeg (fresh or ground)
1/2 tsp cinnamon
1 tsp vanilla extract
1 tsp apple cider vinegar
1/2 tsp baking soda
Pre heat oven to 180 degrees. Mix eggs with coconut flour until smooth. Then add all other ingredients and mix well. I think mixing by hand works best here.
Then place mixture into muffin cup and into a muffin tray, the mixture makes 8 muffins. Into the oven for 20-25 minutes.
Next time I make these I would crumble in some feta cheese to make it ooze with cheesiness!
