Almond butter is a great alternative to peanut butter – so versatile and much healthier. I am constantly trying to satisfy my sweet tooth (slash addiction) but at the same time need to stay off the sugar train so I found these great little almond fudge treats which are super easy to make and definitely satisfy the sweet cravings!

- 1 cup raw creamy almond butter – unsalted (you can make your own really easily by taking whole organic almonds or my personal favourite using almond flour which halves the times – using a food processor literally blend and blend some more until you reach a creamy paste)
- 1/4 cup coconut oil, softened
- 1 1/2 tablespoons water with 1/2 teaspoon stevia disolved (can use 1 1/2 tablespoons of raw honey if you like)
- 1/2 teaspoon fine sea salt
You can blend all the ingredients in a food processor or hand mixing works perfectly fine (and less washing up!). Mix all ingredients and then pour onto a deep plate lined with grease proof paper. Put into the freezer for about 15 – 20 minutes so that the mixture gets hard enough to cut and keep its form. Cut into squares, this recipe make about 8 squares and then place in a container and keep in the freezer. Treats on tap for when the cravings hit!
