Broccoli is another one of those vegetables that I know I should eat because it is so good for you but not one I love the taste of. I do however love this salad that gives a good balance of flavour and sweetness to the broccoli and best of all it is raw – so it packs twice the punch!
A bag of tender stem broccoli (or half a head of normal broccoli)
Half an apple
Half a red pepper
Tablespoon of Dijon mustard
Tablespoon of white wine vinegar (or apple cider vinegar)
1 teaspoon honey (or sugar equivalent)
Salt and pepper to taste
Handful of sunflower seeds
Use a food processor to pulse the broccoli, pepper and apple. Add mustard, vinegar, honey, salt, pepper and pulse a few more times until mixed through. Pour into a bowl and then add the sunflower seeds. Serve immediately and water will escape from the mixture.
