It’s been a while since I’ve tasted the delectable crunch of granola or muesli and wow do I miss it!
This was back in the day when I was unaware of the amount of sugar that was loaded into these products and before I was sensitive to gluten.
I was really excited when I came across this idea of buckwheat granola! Now much against its misleading name buckwheat has nothing to do with wheat and is not even a grain.
1 cup buckwheat (groats and the non toasted type)
1/2 cup dessicated coconut
A few handfuls of seeds – you can use sunflower, sesame, chia, pumpkin etc
1/4 cup coconut oil
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon vanilla essence
A teaspoon of sugar (I use xylitol otherwise you can use a tablespoon if honey if you like)
Dried fruit is an option here of course
This recipe works best when you just add in what you like and make a bit of a mish mash!
Mix all the ingredients so that everything is covered with coconut oil and place in the oven for about 40 minutes on 160 degrees until golden brown.
Layer granola with your favourite yoghurt, fruit and top chopped nuts (I used walnuts here) and enjoy the glorious crunch of sweet, salty, cinnamon healthiness!
