Finding sugar free / gluten free / dairy free treats can be a little tricky! I found this recipe courtesy of Chocolate Covered Kate, which i am so grateful for because they are delicious and something I always try to keep in my freezer kinda like a break the glass for emergency situations!
1 cup desiccated coconut (no sugar added)
1/4 cup water with 1/2 to 1 teaspoon stevia/Xylitol (or 1 tablespoon honey)
2 tablespoons coconut oil
1/2 tsp vanilla extract
1/8 tsp salt
Mix all the ingredients in a food processor. You can mix by hand here but the consistency won’t be as good. Then place into a freezer container about 10cm x 6cm and press down with a spoon. I pre cut the squares into 8 blocks and then put into the freezer for about 1 hour. They are them hard enough to break into squares. Be warned they freeze hard so pre cutting is a must before you freeze!
I also take these to the next level by adding a “chocolate” topping. See here for the recipe for the chocolate topping. Simply pour it over and freeze until set.
