I love love love chorizo, I don’t have it all the time but when I do I make this glorious little dish!
1 TBS olive oil
2 chicken breasts, chopped
1 onion, chopped
1 red pepper, sliced
100g chorizo, sliced
2-3 garlic cloves
1 tbs cajun seasoning or smoked paprika
400g tin of plum tomatoes
Salt and pepper to taste
Water as needed
Fresh coriander, chopped
Fry onion in olive oil until soft, add chorizo, garlic, chicken and fry until browned. Add red pepper spices, salt and pepper to taste. Then add tomatoes and simmer for 20-25 minutes.
Drain rice, rinse, then microwave for 1 minutes and rinse again. Add to chicken mixture. Shirataki noodles and zero carb and gluten free! If you haven’t found out what they are yet – do yourself a favour and try them out in noodles, penne, rice and even lasagne sheets. They are tasteless and the water they come in have a lightly fishy smell so that is why I saw rinse twice but then they absorb the flavour of your dish and you guests won’t be even it is not real rice!
