These gluten free pancakes taste like a real treat, they won’t leave you with a sugar come down and are you can whip them up in minutes (no batter consistency issues here!).
1 ripe banana
A sprinkle of cinnamon
Mash the banana is a bowl until there are no lumps then crack in both eggs and mix well. Sprinkle in cinnamon.
Heat and oil a pan and pour in ‘batter’ and fry on both sides for about 3 minutes each.
Serve with crispy bacon and a squeeze of lemon with some additional cinnamon to taste. Oh course you can add honey or syrup here if you like.
