As soon as the temperature starts to drop one always feels like a hot dish straight from the oven. Now that doesn’t have to mean 3 hours of watching your dish bubble in the oven. This chicken Provençal recipe is quick to put together and super tasty.
4 chicken pieces or 2 very large breasts with skin on
1 tin tomatoes or 4/5 fresh tomatoes, chopped
About 12-15 black olives, pitted
Half a red pepper
Half a yellow pepper
4 cloves garlic
Pre heat oven and dish at about 200 degrees. Fry and seal chicken pieces in a pan, then set aside. Fry onion, garlic and peppers for a few minutes then add tomatoes and olives and cook for a further 5 minutes. Throw all the ingredients including the chicken pieces into your pre warmed oven dish and bake for about 30 minutes.
