I don’t believe in eating an abundance of fruit because of the high levels of fructose. Yes, fruit is healthy, but there are very little nutrients that you get from fruit that you can’t get from vegetables.
Our ancestors certainly didn’t have access to whatever fruits they wanted, when they wanted and they certainly weren’t genetically modified to cater for the growing taste for extra sweetness!
I tend to stick to fruits that are low in fructose and I most certainly eat the whole fruit when I do as opposed to just having the extracted juice.
I’m loving my new ice cream maker and trying out new sugar free recipes, this latest one was another winner! The luxurious creaminess of the Greek yoghurt and the natural sweetness of the blackberries makes for the most delectable guilt free treat!
1.5 cups Greek yoghurt
100g fresh or thawed blackberries
Rind of half a lemon
Juice of half a lemon
5 drops of Stevia liquid (I use NuNaturals but you can use a tablespoon of honey or sugar)
1/2 tablespoon vanilla essence
Punch if salt
Blend all the ingredients in a blender/good processor then refrigerate for one hour. Pour into your ice cream maker for ten to fifteen minutes and voila your masterpiece is complete!
