January – detox detox detox – is all everyone is saying (including myself). No more Christmas markets, no more waffles, no more fudge, no more gluwein…but does that mean no more yummy food at all? I say NO!
Wow is all I can – this recipe is truly delectable! I whipped this up tonight and my housemate could not believe I had made sugar free frozen yoghurt!
I have experimented with a few ice cream recipes since I bought my ice cream maker and most of them have been a surprising success! This one is definitely a winner.
340g full fat greek yoghurt (don’t use fat free as it’s loaded with sugar!)
Grated rind of half a large lemon
Juice of half a lemon
1/2 TBS vanilla extract
1/4 tsp salt
6 drops liquid stevia (I use NuNaturals but you can use any sugar alternative)
Water as needed
Mix all ingredients together and add water as needed to make a runny consistency. Store in the fridge for an least 1 hour. Pour into your ice cream maker for 10-15 minutes.
Enjoy! Believe me you will! It freezes quite hard so it’s best to enjoy it all at one time – if you are like me it will be very hard to keep any for leftovers! The fat helps it stay creamy so full fat is best and cream also works well. The one thing sugar does is help to prevent the hard sugar crystals seeing as we don’t use sugar in this recipe it does freeze hard so you will have to let it thaw for about 20-30 minutes before you want to eat it. It is possible to make ice cream and frozen yoghurt without an ice cream maker but it involves a bit more effort. You will need to place it in the freezer and then stir it up after about 1 hour and then at about 2 hours it should be ready to eat.
